Daniel, sure, it would help... if one would make sure the categories are named in a similar manner that need to be kept together. Or that gaterories are added together so they'd keep together.
try adding food categories pizza, chinese, thai and then dozens of other non-food categories, like night clubs, discos, then one food category that just became hot, then other categories that have nothing to do with food, then yet another trendy food category.
After a while you'll notice that none of the backend sorting options can keep those food categories together...
Take a look at how Ignite Gallery (and a lot of other components) have organized this, see the attached image.
This kind of sorting options allow individual category ordering. This is really handy when you add the sub-categories.
