Where can I edit the text of the "Send booking" button?
And where can I delete the line with the payment details of the booking (because payment in advance is not relevant for this customer).

this one is in the payment plugins translations (administrator/language/en-GB.plg_payment_*.ini)

When it is not relevant why do you show it? Just disable all payment plugins and the booking form will just be 2 pages and fees are still shown.
