I did check your demo and I need to know if this is possible:

Informations:
Disable: Number Display (eg 2/16)
Status: Change to Available(with available slot), Full (Fully-booked)... Unavailable (date finished)
Bookable: Rename to "Available Slot"

Schedule:
Can we schedule one event to different dates and different timing... example if i have workshop in the morning and one in the afternoon and we do it twice a week.

Button:
Paid Booking button to "Pay Now"

Catcha:
I try your demo... when the captcha is wrong while booking... it goes back to STEP 1 and erases all data that was written.

You can just hide it (input + display) with CSS.

Status: Change to Available(with available slot), Full (Fully-booked)... Unavailable (date finished)

You can just rename the language placeholders with an language override in Joomla for that. You can set wether new bookings should be on waitlist or not possible when the event is full.

I would suggest you create two events for that with multiple dates, this is easier to manage then. But rest is possible.

The validation of the captcha has to be done in PHP, you should use recaptcha because of this.. As it is done in PHP there is no way to recover the data then.

I hope you are not really on 3.4.1.. Then you are almost 100% hacked, as there were some severe security issues in it. We don't have trial versions, just a live demo where you can also test the backend.
